For the Filling

  • 500 g fresh spinach washed and chopped
  • 250 g ricotta cheese
  • 100 g grated parmesan cheese
  • 2 pieces eggs
  • Salt and pepper to taste
  • 1 pinch nutmeg

For the Sauce

  • 500 ml tomato sauce
  • 1 piece onion finely chopped
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp sugar
  • fresh basil leaves

For the Lasagna

  • 12 pieces lasagna sheets
  • 200 g mozzarella cheese sliced
  • 100 g grated parmesan cheese

Instructions
 

Prepare the Sauce

  • Heat olive oil in a skillet and sauté the chopped onion and garlic until translucent.
  • Add the tomato sauce, season with sugar, salt, and pepper, and let it simmer for 10–15 minutes.
  • Stir in fresh basil leaves at the end.

Prepare the Filling

  • Wilt the spinach in a skillet without oil until softened. Cool and squeeze out excess water.
  • In a bowl, combine ricotta, parmesan, eggs, nutmeg, salt, and pepper. Fold in the spinach.

Assemble the Lasagna

  • Spread a thin layer of tomato sauce on the bottom of a baking dish.
  • Layer lasagna sheets, followed by spinach-ricotta filling, more tomato sauce, and mozzarella slices.
  • Repeat until all ingredients are used, finishing with mozzarella and grated parmesan on top.

Bake

  • Preheat the oven to 180°C (350°F).
  • Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for another 15 minutes until golden brown.

Tips and Variations

For a gluten-free version, use gluten-free lasagna sheets. For a lower calorie dish, replace ricotta with cottage cheese. Add a spicy twist with a pinch of red pepper flakes in the sauce.
