For the Pasta

  • 300 g spaghetti
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 small onion finely chopped
  • 200 g fresh spinach washed and drained
  • 300 g salmon fillet skinless and cubed
  • 200 ml heavy cream
  • 50 g grated parmesan cheese
  • 1 zest lemon
  • 1/2 juice lemon
  • Salt and pepper to taste

Instructions
 

Cooking the Pasta

  • Bring a large pot of salted water to a rolling boil.
  • Add the spaghetti and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

Sautéing the Aromatics

  • In a large skillet, heat olive oil over medium heat.
  • Add the minced garlic and chopped onion. Sauté for 2–3 minutes until fragrant and translucent.

Cooking the Salmon

  • Add the salmon cubes to the skillet. Season with a pinch of salt and pepper.
  • Cook for 3–4 minutes, turning gently to ensure all sides are lightly golden and cooked through. Remove from the skillet and set aside.

Preparing the Spinach Sauce

  • In the same skillet, add the fresh spinach leaves. Cook for 2–3 minutes until wilted.
  • Pour in the heavy cream and stir well.
  • Gradually add the grated parmesan and lemon zest. Stir until the cheese melts, and the sauce is smooth.

Combining Everything

  • Return the salmon cubes to the skillet, gently folding them into the sauce.
  • Add the cooked spaghetti, tossing well to coat the pasta evenly. If the sauce is too thick, add a splash of reserved pasta water to adjust the consistency.
  • Squeeze in the lemon juice, and season with additional salt and pepper to taste.

Tips and Variations

For a vegetarian option, replace salmon with mushrooms or zucchini. Adjust the creaminess by adding more pasta water as needed.
