  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 800 g canned whole peeled tomatoes
  • 2 cups vegetable broth or chicken broth
  • 1/2 cup heavy cream
  • 1 tsp sugar optional, to balance acidity
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 1/4 cup fresh basil leaves, chopped

Instructions
 

Sautéing the Aromatics

  • Heat olive oil and butter in a large pot over medium heat.
  • Add chopped onion and sauté for 3-4 minutes until soft.
  • Stir in the minced garlic and cook for 30 seconds until fragrant.

Cooking the Tomatoes

  • Pour in the canned tomatoes with their juices.
  • Break up the tomatoes with a spoon and add broth, sugar, salt, black pepper, oregano, and red pepper flakes if using.
  • Simmer for 15-20 minutes.

Blending the Soup

  • Remove from heat and add fresh basil leaves.
  • Blend until smooth using an immersion blender or transfer to a blender in batches.

Finishing the Soup

  • Return the blended soup to low heat and stir in the heavy cream.

Serving

  • Ladle into bowls, garnish with extra basil, a drizzle of cream, and Parmesan cheese if desired.
